For our first box, we brought in two coffees directly from a farm that has consistently made a strong showing each year in the Best of Panama auction. Mama Cata Estate has been owned by the Garrido family since 1975 and was named in honour of a matron of the previous family, Catalina Fisher. Situated at 1500-1700 masl the farm produces many high quality varieties such as typica, geisha, mokka, sudan rume and pacamara.
Natural ASD Mokkita
Origin: Boquete, Panama
Roast Profile: Light
Mama Cata Estate has ranked 1st over the last two years in the non-geisha category for their unique ‘Mokkita’ variety. It is believed to be a substrand of the Mokka variety from Yemen. As a very low-yielding variety it produces only about half the amount of cherry as geisha. We were fortunate enough to have the pleasure of securing small batches of this coffee last year. So again we are thrilled to have it available so we can offer it in our first Peak Subscription.
Tasting Notes: Violet, Rose, Orange Blossom, Poached Pear, Caramel Dipped Strawberry
Washed Geisha
Origin: Boquete, Panama
Roast Profile: Light
This is as classic as you get with a washed geisha from Panama and this one has the pedigree to back it. This is a singular strain of geisha with an emphasis to highlight flavours of jasmine, lemon, bergamot and peach in the cup. Mama Cata estate had done a genetic test to verify that this strain is 100% identical to the original strain first distributed by CATIE (Centro Agronómico Tropical de Investigación y Enseñanza) after it was brought over from Ethiopia in the 1950’s.
Tasting Notes: Jasmine, Peach, Lemon, Passion Fruit, Black Tea
